It's appropriate, given its name, that this cocktail was born in a snowstorm. "When it snows in Vancouver, there's not much to do," points out Shaunne Murrray, Q4 al Centro restaurant's bar manager, "except stay indoors and play a round of poker with the guys." In this instance, the guys were colleagues from the restaurant and the house they were seeking shelter in was low in provisions. "We had some Scotch, some ginger ale and we definitely had ice," Murray recalls.

The result is the Iceberg, so named for the snowy situation that inspired it as well as the fact that, when the mix is poured into a rocks glass, the ice within rises to the top, "looking like the tip of a glacier, which is pretty cool," Murray says. Making it is equally breezy: Simply pour all the ingredients but the prosecco over ice in a shaker. Shake vigorously and strain into a rocks glass half-filled with ice. Top with prosecco and garnish with a lime twist. Winter in a glass.

1/2 ounce Scotch

1/2 ounce amaretto

5 ounces ginger ale

2 dashes orange bitters

Splash of vermouth

2 ounces prosecco
