Nothing says comfort food quite as well as local fall apples baked with cinnamon. It takes minutes to get this simple treat into the oven. If you want to speed up the baking process, the apples can be partly cooked in the microwave first. While the apples are delicious on their own, you can also top the treat with butterscotch sauce or good-quality vanilla ice cream if the occasion calls for something a bit more decadent.
Servings: 4 to 6
6 or 8 apples (any kind)
1/2 cup softened butter
1/2 cup brown sugar
1 cup rolled oats
1 teaspoon cinnamon
Rest each apple on its side and neatly slice off the top half-inch. (The stem should fall out.) Reserve the little apple hats. Use an apple corer to remove the hard core and seeds. Nestle the apples tightly together in a baking dish.
With your hands, stir together the butter, sugar, oats and cinnamon, working the mixture until it is combined and crumbly. Evenly divide the mixture among the apples, filling their centres and mounding the rest on top.
Replace the little tops on each of the apples.
Bake for about 45 minutes, depending on the type of apple. They’re done when they soften.
