This snack staple is easy enough to whip up whenever you have a craving.

Servings: 2 cups

Ready Time: 45 minutes

Ingredients

2 cups unsalted, roasted peanuts

1 cup sugar

1/2 cup water

1 tbsp. maple syrup

Salt

Method

Pre-heat oven to 300 F.

Place the water, sugar, nuts and maple syrup into a large, heavy bottom pan

Bring to a boil over medium-high heat until the liquid has disappeared (8 to 10 minutes). Stir occasionally to avoid burning.

Near the end the sugar will be foamy. so pull it off the heat to see how much liquid is really left. It will dry up and start to crystalize.

Put the nuts on a parchment lined cookie sheet - this will avoid messy clean-up - and sprinkle them with salt.

Bake 15 minutes. Remove from oven and toss.

Bake another 15 minutes until the nuts are fragrant and browning.

Remove from the oven and cool.

Store these in an airtight container to keep them crisp.
