Bourbon might be the ultimate summer spirit. It's made from corn picked at the height of ripeness and you might pick out flavours of caramelized banana and butter-pecan ice cream beneath its oaky aroma.

Ingredients
4 or 5 mint leaves
2 lemon wedges
Dash Crème de cassis
1½ ounces Bourbon
Cranberry juice
Soda to top
Method
Muddle mint and lemon wedges in a shaker with ice. Add cranberry juice, bourbon and cassis. Shake well, pour into a pint glass and top with soda.
