Paella is one of my favourite main course dishes. With a little rejigging, it can also make a brilliant side dish; the brightness of its Spanish saffron contrasts beautifully with the pale subtlety of the white halibut. Although this is not a Spanish menu, per se, I have included a Spanish-influenced salad to go with it. Earl Grey chocolate mousse is a delightfully rich dessert and should be served in very small quantities.
