This incredibly simple yet delicious dish combines the flavours of fresh dill and lemon with the rich taste of salmon. If you don't have fresh dill, substitute 2 teaspoons of dried dill. For added flavour, garnish each fillet with freshly grated lemon zest before serving.
4 salmon fillets (4 ounces/120 grams each)
2 cloves garlic, chopped
2 tablespoons fresh dill, finely chopped
Freshly ground black pepper, to taste
4 lemon slices
Preheat oven to 375F (180C).
Place fillets on a baking sheet lightly coated with cooking spray. Evenly sprinkle the fillets with the garlic and dill. Place a lemon slice on top of each fillet.
Bake for 12 to 16 minutes or until fish flakes easily when tested with a fork.
Per serving: 165 calories, 23 grams protein, 7 grams total fat (1 gram saturated fat), 1 gram carbohydrate, 0 grams fibre, 63 milligrams cholesterol, 51 milligrams sodium
