Try this low-fat recipe that tastes similar to the real thing. They're baked not fried.
Servings: Makes about 16 pancakes.
4 cups Yukon Gold potatoes, grated
½ cup grated onion
2 egg whites
Salt and pepper to taste
Vegetable oil or baking spray
Preheat oven to 375 F. In a tea towel, squeeze out liquid from grated potato and onion. Combine with egg whites, salt and pepper.
Grease or spray a baking sheet. Add 2 tablespoons of mixture, and flatten into a 3-inch circle. Place in lower third of oven and bake for about 10 minutes or until golden. Turn over and bake another 10 minutes or until browned and crisped on both sides.
