I make steel cut oatmeal every week and microwave it for breakfast each morning. This recipe came as I experimented with the leftovers. Kids love them served with maple syrup.

Servings: 8

Ingredients

1 large egg

¼ cup milk

2 teaspoons sugar

Pinch salt

1 cup cooked steel cut oats

¼ cup all-purpose flour

1 tablespoon vegetable oil

Method

Whisk together egg, milk, sugar and salt in a bowl. Add oats, breaking up lumps until well combined. Stir in flour.

Heat oil in a non-stick skillet over medium high heat. Use about 3 tablespoons oatmeal batter for each pancake. Fry for 1 to 2 minutes a side or until golden. Serve with maple syrup.
