Award-winning mixologist Brynley Leach serves up homemade iced tea, laced with icy vodka, at the newly opened Montreal hot-spot Le Bremner, on Rue St. Paul Est in the Old Port.

Ingredients

2 ounces premium vodka

6 ounces homemade iced tea

10 to 15 leaves lemon verbena

1 passion fruit

Method

Prepare the iced tea in advance by adding three Earl Grey and three Orange Pekoe teabags, the juice from two lemons and a half-cup of sugar in a large (60-ounce) teapot.

Add hot water until the pot is about three-quarters full and let steep for an hour.

While waiting for the tea to cool, place 10 to 15 lemon verbena leaves in a jam jar and muddle.

Add ice, vodka and the homemade tea. Finally, crack open a passion fruit and let the kernels fall into the drink. Garnish with a verbena sprig.
