With this dessert, guests will think you've been busy churning all afternoon. The salted pistachios help cut the creaminess of the ice cream. I scoop the ice cream out about an hour earlier and place on a cookie sheet in the freezer so it's easy to assemble.

Ready Time: 3 hours

Ice cream

1 cup vanilla ice cream, softened

1 cup mascarpone

2 tablespoons honey

2 teaspoons lime rind, grated

Peaches

3 large ripe peaches, peeled and diced

2 tablespoons lime juice

2 teaspoons lime rind, grated

2 tablespoons honey

3 large biscotti, crumbled (about 1½ cups)

¼ cup salted pistachios, chopped

Method

Whisk together ice cream and mascarpone. Whisk in honey and lime rind. Place in a bowl, cover and freeze for about 3 hours or until firm.

Combine peaches, lime juice, lime rind and honey and let macerate for 30 minutes or until peaches are juicy.

Layer 4 parfait or wine glasses with biscotti crumbs, peaches and juice, and ice cream, repeating layers and finishing with a sprinkling of pistachios. Serve immediately.
