This recipe is a basic way to start serve quinoa at home and would go well with almost any main course.
Ready time: 15 minutes
1 cup quinoa
1 to 2 tbsp olive oil
1/4 tsp salt
fresh ground pepper
squeeze of fresh lemon
2 tbsp chopped cilantro
Rinse quinoa well before using (1 to 2 minutes under running water).
Fill a medium pot with water, add a pinch of salt and bring to a boil.
Add the quinoa and simmer for about 10 minutes or until the quinoa is soft and a little chewy. You will also see a little white ring around the kernel, another sign that it is done.
Strain the quinoa and put it back in the pot.
Add olive oil, salt, pepper, lemon and cilantro.
