To roast garlic, cut off the top third to expose the cloves, place in foil, drizzle with olive oil, close up and bake at 350 F for about 40 minutes or until soft. Squeeze the garlic out.

6 Yukon gold potatoes, peeled and cut in quarters

1 head garlic, roasted

½ cup warm milk

2 tbsp. butter

Salt and freshly ground pepper


Place potatoes in pot of cold water and bring to boil. Boil for 10 minutes or until potatoes are tender. Turn off heat, drain potatoes well and replace on turned-off burner to dry.

Mash potatoes, then beat in roasted garlic, milk, butter, salt and pepper.
