Sweet potatoes are low in calories, full of vitamins and very versatile. Never refrigerate them because they get an off flavour. Leave them in a cool place.

Servings: 4

Ingredients

4 sweet potatoes (or yams)

¼ cup olive oil

4 cloves garlic, sliced

12 sage leaves

Salt and pepper to taste

Method

Preheat oven to 400 F. Peel sweet potatoes and cut length-wise into 3 or 4 slices. Combine oil, garlic and sage leaves in a bowl. Toss with sweet potatoes. Season and place sweet potatoes in a roasting pan or rimmed baking sheet and bake for 35 to 40 minutes turning occasionally. They should be soft on the inside and crispy outside.
