Servings: Makes about 7 cups.


1 large Spanish onion, chopped

½ cup butter

Salt and freshly ground pepper

6 cups fresh breadcrumbs

1/3 cup chopped fresh sage, or 1 tablespoon dried

¾ cup apple juice


Melt butter over medium-low heat in a small saucepan. Add onions and sauté for 8 to 10 minutes or until softened. Stir in sage.

Combine salt, pepper and bread crumbs in a large bowl. Stir in sautéed onions. Add just enough apple juice to bind stuffing.
