Simple syrup is used a lot in bar drinks and cocktails and is a great sweetener for iced tea and lemonade. In cooking you use simple syrup to moisten a pound or sponge cake, make sorbet or even lightly in a fruit salad.
Servings: Makes 2 cups
Ingredients
1 cup sugar
1 cup water
Method
Combine the water and sugar in a saucepan and bring to a boil.
Remove from heat right away - you don't want too much water to evaporate or the syrup will be too thick and too sweet.
Pour into a clean plastic container. (Ideally, boil your container or put it through the dishwasher beforehand to make sure it has no impurities that can cause recrystallization of the sugar.)
Cool and refrigerate. It will keep in the fridge for a few weeks.
