Serve with ripe pears or sliced strawberries marinated in a little port.

½ cup walnuts

½ cup ricotta cheese

½ cup Stilton or other blue cheese

1 teaspoon grated orange rind


Preheat oven to 350 F. Place walnuts on cookie sheet and bake for 10 minutes or until lightly toasted. Place in food processor and process until the texture of coarse crumbs. Reserve half of nuts and leave the remainder in food processor.

Add ricotta, Stilton and orange rind. Process until combined. Remove to bowl and chill for 30 minutes or until firm enough to hold together.

Form into a round like a hockey puck and coat with remaining nuts. Chill until firm.
