Za'atar is a Middle Eastern spice blend (typically including dried thyme, sesame seeds, sumach) that's extremely versatile. Use it in salad dressings or on roast chicken or vegetables. Most simply, it is often mixed with olive oil and spread on bread. I've seen Za'atar popping up in grocery aisles, and if you haven't used it before, these pita crisps are an easy way to introduce some new flavour to your pantry. They're so good that you'll be snacking on them at home, at work, on your commute and while you make a backup batch.

Large pitas

Olive oil

Za'atar

Salt

Method

Preheat the oven to 350 F. Cut two large pitas into bite-size triangles. You can split the pitas in half before you start cutting or just cut and separate the halves.

Place the pita triangles in a large, deep bowl and drizzle with 3 tablespoons of olive oil. Toss with your hands until the triangles are covered. Add one more tablespoon of oil if needed.

Now add 3 tablespoons of za’atar and 1/2 teaspoon of salt. Again using your hands, toss well until the spices and salt are well distributed.

Place on two cookie sheets so the pitas are not overlapping. Bake till they’re crisp and golden – 10 to 12 minutes. Makes about 40 chips.
