Here is a quick and easy recipe that will come in handy when you face the inevitable mountain of leftover turkey after Thanksgiving.
Cranberry sauce or chutney to taste
Slices of bread
Slice cooked turkey thinly. Fry some bacon until crisp. Slice ripened tomatoes thinly. Mix together light mayonnaise with cranberry sauce or chutney to taste. Spread on each slice of bread. Top with turkey, bacon, tomato and arugula. Top with second slice of bread. Press down and slice in quarters.
