You might think that one of Canada’s top chefs would have a big team on hand to orchestrate his elaborate Christmas feast. But in the case of Mark McEwan, it’s not so. “I’m always on tap to do the cooking, but that means I don’t have to clean up,” he says.

McEwan has plenty to celebrate this year, with successful restaurant openings under his belt (Fabbrica in Thornbury, Ont., and its quick-serve sister in Toronto’s Financial District), a third gourmet grocery store coming soon, on Toronto’s Bloor Street, and having just wrapped filming on season seven of Top Chef Canada, where he is a judge. He’ll spend Christmas at his family cottage, where he typically roasts a goose with juniper sauce and all the trimmings after spending the day outdoors.
