A Canada Day menu fit for all foodies (even the vegetarians!)

Have to satisfy the meat-eaters, seafood-lovers and veg-only crowd this weekend? Plan for all three and then turn up the heat. This mix-and-match grill menu offers both surprising boldness and considerable variety to accommodate every guest you may have over (how's that for a Canadian concept?)

For carnivores, a subtly spicy rub lets the rich flavour of bison steaks shine; the sauce on the accompanying tomatoes tastes just like the tangy Albertan cocktail it's named after. For vegetarians, chili powder gives eggplant, a hearty meat substitute, earthy heat, while jalapeno and lime enliven the cornmeal-based side dish, a gourmet take on nachos and salsa. For pescatarians, ginger and harissa paste lend some kick to seafood without overpowering it and pair well with the subtle sweetness of cooked red onion stuffed with aromatic herbs and rice.
